Sweet Curry Drumsticks
with pineapple salsa

Curry powder is a blend of ground spices used in Indian cooking and typically contains cumin, cardamom, cinnamon, ginger, turmeric (for yellow color), and cayenne.


Pineapple-Pepper Salsa:

  • 1 cup diced fresh pineapple
  • ½ cup diced red bell pepper
  • 2 T. minced red onion
  • 2 T. chopped fresh cilantro
  • 2 T. fresh lime juice
  • 2 t. sugar
  • 1 T. minced jalapeño
  • Salt to taste

Sweet Curry Drumsticks:

  • 3 T. curry powder*
  • ½t. red pepper flakes
  • ½ t. kosher salt
  • ½ t. black pepper
  • 8 chicken drumsticks
  • 2 T. vegetable oil
  • ¼ cup apple jelly
  • Steamed rice
  • Lime wedges and cilantro


Combine all ingredients for the salsa in a bowl and set aside at room temperature until ready to serve.

Combine spices for the drumsticks in a large bowl. Add drumsticks to the bowl and coat thoroughly. Add oil to a large frying pan and saute spiced drumsticks until brown on all sides, 6-8 minutes (reserve remaining seasonings in bowl). Transfer pan with chicken to a 375° oven and roast 30 minutes until chicken is cooked through. Remove chicken from the pan and return pan to burner. (Do not turn oven off.)

Add reserved seasonings and jelly to the pan and heat, stirring constantly, until jelly melts. Return drumsticks to the pan, turn to coat with jelly, then roast in the oven an additional 10 minutes to set the glaze. Serve over steamed rice and top with Pineapple-Pepper Salsa.
